We shared a lot about Hyd, its past and present. Now I am gonna throw something very interesting to be discussed, and hope everybody loves this topic: The World Famous & Delicious Hyderabaadi Dishes! And everybody is invited to come here with one famous Hyderabadi dish with its recipe... We have 1000\'s of combinations, so come on, what are you are waiting for? But but but but but, one has to come with one dish or one combination only. Please give chance to others also. So everybody, here is my turn... My favorite & famous Hyderabadi dish is \'Khatti Daal + Dam ka Kheema + Hot Rice & Papad\'. The combination is superb and fantastic, and I love to have this in my lunch.

Arey Yaar \'KC\', there is one solution for your KHOPRA HI KHOPRA (u r right). Bhai why don\'t you cook yourself in your home. Take out sometime... believe me most of our dishes are very simple & easy to cook. Just spend few minutes and enjoy the mashoor Hyd\'s food. Otherwise if you are staying with a group of hyd\'s people then hire a hyd\'s cook. Pay him monthly and enjoy the food.

Dear brother Shahed, I just cant take part in this discussion. To name one dish as favorite! impossible. Allow me to list my favorites - you will see juices flowing! neway, good thinking. I am already thinking of my dinner. Aur hamari badnaseebi dekhiyeh, kahan hyderabadi woh mazey mazey ke khaney aur yahaan keralite hotel mein, khopra hi khopra! mere to taste buds markey million years ho gaye.

I personally congratulate fullhyd.com for successfully running and maintaining this board perfectly considering each and every aspect. A little problem we are facing... that is Sorting of messages, they are not coming in sequence of questions and answers.. Sometimes it is difficult to link the answer with the question if the board is hefty. Still I appreciate your efforts and in future you will definitely come up with some solution. Congrats for everything and Thanks a lot for helping in sharing our views.

My favorite is Khatti Daal or Dahi ki Kadi Bhajyon key saat aur talah huwa ghost (bakrey ka) aur basmati chawal, saat mein mitha (sweet) phir uskey baad chaye phir pan, kya kheney.

My favorites: Harey kantein waley baigan with nathni macchi or kabaab (dried marinated meat)... and the other is Chugar aur seeney ka gosth... beat it man! agar ek kilo chaval nai khaya main in salano ke saath to phir main bhi abbu sher nai bola! phalli pe dhoom dhaam.

Wah Kulcha bhai , aapnay to bade mazakay khanoaki baath ched dee hai , meray pakwaan mein zara aasani ho gayi hai. warna roz subah sonchnay mein hi dopahaer ho jaati thi kay aaj kyaa banega . Waisay \"chugar mera bhi favourite hai\".Baghara khana , same ki phalli gosht aur kacchi imli ka dalcha .Qubuli , buthi ,bagharay baigan ,aloo methi qeema,chongay aur sherbat kyaa baath hai dus moharram ki yaad taaza hogayi.Shahed bhai,mein nay ek say zyaada dishes likh diye hain umeed hai aap mind nahi karengay.

Ambaday ki bhaji aur rawaaz dar goshth, chukka ambada soya combination, kulfe ki kathlee, ambada aur chaney ki daal, maat ki bhaji aur kabab (wohi apne sukhe huve kabaab), Khageena, Ganwaar ki Phalli with Til, Aloom methi goshth, Aloo aur tomato ka khatta with Seeney ka Goshth, Bhendi ka Khatta, Sojini ki phalli, yeh thoday bahut light items......mere favorites hain. I luv all other elaborate items like, Bagharay Baigan, Mirchion Ka Salan, Dam ka Goshth (Woh bagoney ke dhakkan pey aata bhiga ke lagaana...for sealing purposes!),and by the way, have you noticed, Chicken was never a favorite dish for Hyderabadis until recently. Murghi ko bas dahi lagake pakaatey the pahle! Yeh sukki murghi, dam ki murghi, yeh 65, were rare in those days!

Yaar aaap sab tou ek se zyaada aur bahoot hi zaaykhe daar dishes leke board pe aa rahe hai, ab tou mujhe bhi control nahin ho raha, MAIN YEH RESTRICTION NIKAALTA HOON One/One ki ...Ab aap log jo chaho jitna chaho pasand ki dishes leke maidaan mein kood pado. Kuch aur tohfe -- Sardiyon ki pehli subah..Haai... Sunday ka din .. Dastar pe Garam Garam khichdi , Imli ki chatni , Chowk ka Achaar , Papad aur Asli Ghee ... Waaaw !! Aur doosre Sunday Garma Garam Nehari(Ghar ki) with Paaye,Zabaan & Famous Naan ... Apun to Khallaaass!! Few special dishes Like Chaakna.. Dam ke tamaate.. Khorma..And ofcourse Baghaara Khaana with Daalcha & Phalli ka saalan.. Damn it yaar bol bol ke muh mein paani aaraha hai. Hina baaji jaldhi ye sab bana ke ham sab ko bhejiye, aur bhaijaan se zaroor chakha lena bhejne se pahle , hamein unpe bharosa hai.

How about Shikampur , tamatay ka cut ya phir maheqalia with khadi daal.Waisay mein nargisi koftay , wajdi boti ka salan and besan ki kadi , phasli kay haddiyon ki aur kyaa kahoon inmay say kayi aaisay dishes hain jinko khaye huay 3 saal ho gaye.Waisay kulcha bhai, luqmi, kabaab , do waza ki yaani kacchi aur pakki yaqni ki do goshta biryani , dahi ki chutney, mirchon ka salan , dum ka murgh , naan ,kaddu ki kheer ya phir double ka mitha , kyaa baath hai kisi ka valima yaad aagaya.Aap sub ki farmaayash par dil chah raha hai kay aap sub ko paka kar khilaoon.Kaash aaisa ho sakta !

Hina didi, Valimey ki dawaton mein ab thoda badlao agaya hai. Traditional dishes ki jagah kuch naye entrants aa gaye hain. Notable debutants are: Marag and Boti.. Yes, boti ka salan bhi aaj kal dawaton mein dekhne mein aaya hai. Another hot item is Dam ki Raan (whole leg of lamb). Apko shayed maloom hoga ke Marag is originally a Yemeni dish. Next time jab aap Hyderabad ayenge tab apko Marag khaney ka mouqa zarorr milega. Okay sis, take care.

Hina didi, apne dimaagh ku khikar ko do (two) aise item layaoon ke ap bhi wah bolna.....suno...karela aur kakdee (budmaa). Koyee bhi nayee bola ab tak! HAO... Karelon ka salan aur Kakdee gosth...yeh bhi mere chand favorites mein se hai...

Dear Desi Bhai , Mein aapke Pados wale state mein hi rehti hoon.Aksar Berkeley shopping aur \"pasand Restaurant\" kay dosay khane jaatay hain. Singdi to jaisay mein bilkul bhool gayi thi . Aaj kal hamaray paas sozni ki phalli, frozen same ki phalli mil jaati hai.Waaisay aap log Bhendi aur arwi ka khatta sherwa aur pasinday to bhool hi gaye.

Hyderabadi Biryani

Ingredients

Meat - 1 KG Boneless
Basmati Rice - 1/2kg
Onion - 2 Big
Lime Juice - 1/4 Cup
Curd - 500 GM
Ginger Garlic Paste - 4-6 Tsp.
Red Chilli Powder - 1/2 Tsp.
Green Chilli - 4-6 grind into fine past
Shazeera - A Pinch of Shazeera
Clove - 1-2
Cinamon - 1-2
Cardamon - 2-3
Coriander Leaves - A bunch finely chopped
Mint leaves - 8-10 sticks - Plucked only leaves
Safron - 2 pinch of safron, immerse in water
Safron color - A pinch of color liquified with water
Ghee - 2 Tsp.
Oil - 2 Cup oil
Salt - To taste

Method:


Cut the meat into 4\" square pieces and wash it
Add ginger garlic paste to the washed meat and Marinate it for 1 hour.
While marinating you cut the onions thinly lengthwise and Fry the onions in the oil on low flame till it becomes golden brown.
Now remove the golden brown onions from the oil and spread it on the plate, when it cool then crush it with your hand.
Now add the curd 3/4 part of crushed fried onion, Red chilli powder, Green chilli paste, Cinamon, Cardamon, Shazeera, Clove, Coriander leaves, Mint leaves and safron water, salt to taste and remaining part of the oil into this marinated meat and leave for one hour.
After one hour take basmati rice and washed and now pour water into the rice as you cook it and add salt one tea spoon, Cinamon, Cardamon, Shazeera, Clove, Coriander leave, mint leave, Green chilli 2 cut into lenght wise. Now put on flame but when rice start cooking when the rice becomes half cookded. Then remove it flame. Drain out the water completly. Now spread this half cooked rice on the marinated meat. Upon the rice layer you spread lime juice, saffron color and ghee and remaining part of the crushed onion.
Now cover the utensil with lid tightly. Keep it on a very low flame After 1/2 hour exactly take it out from the flame.
Now your delicious tasty Hyderabadi Biryani is ready to eat.
Serve hot with curd chutney or with Bagare Baigan Curry.

Maash ki daal aur roti, Kaairi ka dupyaaza aur mithi daal ,Karonday ka dopyaaza ,qorma roti, tahaari aur tamatey ki chutney .Jabday kaa gosht aur chaval.Kulcha Bhai Dishes qatm honay ka naam hi nahi lete , jaatay jaatay kheer puriyaan yaad dilati chaloon.

Mere ku sengdi ki phalli ka saalan, gawaar ki phalli gosht aur chanwal ki kadi ( badiyon ke sath ) bhot pasand hai.
My bay area, California mein hoon. Ganwaar ki phalli kabhi kabhi mil jaati yaa pe....magar sengdi ki phalli nayi milti.

Aata hai mujghe phir yaad wo zaalim....ammi ke haath kaa sheer khorma.....!! :-(
