Hyderabadi Fare ...
Ingredients
1. 1/2 kg Green chillies (medium).
2. 4 Onions (large, finely chopped).
3. 2 tablespoon Khus khus (poppy seeds).
4. 2 tablespoon Seasame seeds (til).
5. 2 tablespoon Coriander seeds (dhaniya).
6. 1 tablespoon White cumin (sufaid zeera).
7. 1 tablespoon Desiccated coconut powder.
8. 1 tablespoon Red chillies (grounded).
9. 1 tablespoon Turmeric (haldi).
10. Salt to taste.
11. 1 tablespoon Garlic ginger (grounded paste).
12. Curry leaves 6 to 7.
13. 1 teaspoon Nigella seeds (kalonji).
14. 1 tea cup Tamarind juice.
15. 6 Red chillies whole.
16. 6 Fenugreek seeds (methi daana).
17 3 tablespoon Oil.
Method
Firstly slightly bake and grind the ingredients 3 to 7 and keep it all aside. Put oil in frying pan and stir fry the green chillies with some salt. Drain the oil from the green chillies and keep aside.
Start cooking by putting the spices namely cumin seeds, whole red chillies, fenugreek seeds and a couple of curry leaves for tarka in very hot oil.When ready and popping, add chopped onions to it and fry till golden brown.
Add the rest of the spices i.e. red chillies, turmeric, garlic ginger paste and nigella seeds. Stir well and let it cook for 2 minutes.Now add the tamarind juice and let it cook for a minute. Add the green chillies and top it with the remaining curry leaves and let it simmer for 15 to 20 minutes.
When ready may be served with ...rice dishes like Biryani.
