Dear Friends basically im from hyderabad but working in dubai and still a bachelor, i need help from u people to send the hyderabadi recipes which should be easy to cook as i dont know much ,better in detail

Ingredients

1. 1/2 kg Green chillies (medium).
2. 4 Onions (large, finely chopped).
3. 2 tablespoon Khus khus (poppy seeds).
4. 2 tablespoon Seasame seeds (til).
5. 2 tablespoon Coriander seeds (dhaniya).
6. 1 tablespoon White cumin (sufaid zeera).
7. 1 tablespoon Desiccated coconut powder.
8. 1 tablespoon Red chillies (grounded).
9. 1 tablespoon Turmeric (haldi).
10. Salt to taste.
11. 1 tablespoon Garlic ginger (grounded paste).
12. Curry leaves 6 to 7.
13. 1 teaspoon Nigella seeds (kalonji).
14. 1 tea cup Tamarind juice.
15. 6 Red chillies whole.
16. 6 Fenugreek seeds (methi daana).
17 3 tablespoon Oil.

Method

Firstly slightly bake and grind the ingredients 3 to 7 and keep it all aside. Put oil in frying pan and stir fry the green chillies with some salt. Drain the oil from the green chillies and keep aside.

Start cooking by putting the spices namely cumin seeds, whole red chillies, fenugreek seeds and a couple of curry leaves for tarka in very hot oil.When ready and popping, add chopped onions to it and fry till golden brown.

Add the rest of the spices i.e. red chillies, turmeric, garlic ginger paste and nigella seeds. Stir well and let it cook for 2 minutes.Now add the tamarind juice and let it cook for a minute. Add the green chillies and top it with the remaining curry leaves and let it simmer for 15 to 20 minutes.

When ready may be served with ...rice dishes like Biryani.

HYDERABADI CHICKEN BIRYANI (DUM KI BIRYANI)

Chicken - 500 gms
rice - 500 gms
onions to taste
cinnamon - 02 gms
cardamom - 02 gms
cloves - 02 gms
curd - 200 gms
garlic - 02 gms
ginger - 02 gms haldi - 02 gms
dhaniya powder; 04 - gms
red chilli powder - 04 gms
ghee - 200 gms
stock - 500 ml




Method: Pick and soak the rice for about an hour. Cut chicken into the chicken curry cut and marinate it with curd, haldi, dhania and red chilli powders, ginger and garlic and jeera powder. Add the sliced onion and salt and mint to the marination. In boiling water add ghee, cinnamon, cardamom, cloves and jeera and boil the rice till 40 per cent cooked. Add rice to the meat. Pour a little fat and saffron water and cook the rice on dum for about 45 minutes. Serve hot garnished with fried onion and chopped coriander.
