Diwali Festival India


Diwali festival is a 5 day Hindu festival in India which occurs on the fifteenth day of Kartika.

Diwali when translated means "rows of lighted lamps" and the occasion is also referred to as the Festival of Lights. During Diwali, Indian homes are cleaned and windows are opened to welcome Lakshmi, the goddess of wealth. Lamps, lights and candles are lit as a greeting to Goddess Laksmi.

Gifts are exchanged and sweets, festive meals are prepared during Diwali.

The "Wonder" Food ... SOY

After hearing an item on the nightly news about the benefits of a diet rich in soy, I decided to find out more about this "wonder" food. It turns out that what makes soy so unique is that, unlike most plants, it contains high amounts of protein, fiber, and a variety of other nutrients and compounds that are extremely beneficial to one's health.

A study conducted by the New England Journal of Medicine concluded that eating soy protein on a regular basis can cut the risk of heart disease by as much as 30% as well as reduce the danger of both heart attacks and strokes by reducing "bad" cholesterol, and raising the level of "good" cholesterol.

Soy isoflavones, with their many similarities to the estrogen hormone, have been found to ward off certain types of cancer. Soy can also cut the risk of osteoporosis and ease the symptoms of menopause.

There are many ways to incorporate soy into your diet. Soy milk, soy flour, and soy protein powder all can be substituted or spliced into cooking recipes for an interesting twist. Tofu, dried soybeans, and tempeh are also other favorite ways of adding soy to your repertoire. With all of the new evidence about a diet rich in soy, it is no longer just a vegetarian option, but an important component of nutrition in general.

Just two hours outside of New York City in the village of Ellenville, N.Y., you can soar like a bird above the clouds.

Those who have experienced the sports say this is the closest you can get to flying - and freedom.

I actually do it to relax because when you're up flying, it takes your mind off everything else," said Paul Voight, a hang glider. "It requires concentration to be where you belong, and try to stay up, which is the whole game."

But if you like to keep your feet on the ground, you can try hiking though ice caves, just outside of the village. You won't see any ice this time of year, but the trails still provide a 40-degree drop in temperature -- which, even in summer, is like walking though a freezer.

Local rescuers say that the walk is definitely not for the weak at heart, and that it is very strenuous.

"The rocks can be slippery when wet, so you should come prepared with sturdy shoes," said Heide Wanger from the Nature Conservancy. "Actually the hike to the caves is in an exposed area, but once you're in the caves, its lovely and cool." ...

So whether you prefer singing or swimming, flying or frolicking, the Village of Ellenville offers an escape of varying degrees -- depending on the temperature or your mood.

While Ashok Gadgil ***** was growing up in India in the 1950s, water-borne disease killed five of his infant cousins. In 1993 a cholera epidemic struck India, and Gadgil, by then at Berkeley Lab, made up his mind to develop an effective water purifier.

Boiling water takes fuel, hard come by in rural India. Chlorination works well in centralized water systems, but the practical solution for Indian villages was ultraviolet light, which does not kill organisms outright but disrupts their DNA so they quickly die out without reproducing.

Most UV systems need pressurized water from heavy pumps that draw a lot of power. Gadgil knew that to serve poor rural populations, a UV water purifier would have to treat water that was hand pumped or even hand poured.

Gadgil began working after hours with scrounged parts and volunteer help. When the Department of Energy, the US Agency for International Development, and private sources provided grants, he was able to test a prototype UV water purifier in a few Indian villages -- he knew it was too heavy and too expensive, but he could fix that later. The biggest surprise was that it was too efficient! At eight gallons a minute, the villagers couldn't pour water into it fast enough, and it produced more clean water than they could use.

After redesign, the new UV Waterworks weighs only 15 pounds, disables all the pathogenic bacteria and viruses in four gallons of water each minute, uses less energy than a desk lamp and, when a wall socket isn't available, runs on power from a car battery, bicycle generator, windmill, or solar cell.

Well, sometimes old wives know what they’re talking about.

“It was always anecdotal, but it’s been reported so frequently, by so many different people, that you have to think there may be something to it,” says Dr. Russell J. Reiter, professor of neuroendocrinology at The University of Texas Health Science Center in San Antonio.

Reiter recently put some hard science behind the cherry folklore. He conducted a five-month study and found that tart cherries contain significant amounts of melatonin — a hormone produced in the brain’s pineal gland that has been credited with slowing the aging process, and fighting insomnia and jet lag. Lindsey's Wonder ... Service Dog

Regarding "Lindsey's Wonder" (Republic, Sunday):

This was a great article about 7-year-old Lindsey Muszkiewicz, her service dog, Wonder, and her parents' many feelings.

Having had a physically challenged son, I can understand the feelings Lindsey's parents had when they encountered the rude people on the plane. I just wanted to let them know there are always going to be people who are rude, mean and just plain ignorant when it comes to being around someone who is different.

But just remember those are the people we should feel sorry for.

There are many more people who are very understanding.

We learned so much from our son, and I always have a special place in my heart for people who are challenged, and for the service dogs that help them.

Common Wonder Food : Comfort Food : KHICHADI

There is a universal connection between comfort foods eaten all around the world. It has to do with food that doesn’t require much chewing and slips down the throat easily. It is warm, nourishing, and something you can slurp. For an American it would be macaroni-and-cheese, for a Scottish oatmeal and clotted cream, and for an Indian it’s khichadi, made with rice and beans.
Whether you are nursing a bruised ego, a broken heart, or a common cold, it’s comfort food that will soothe you. So, when the world—or the weather—seems harsh, try one my favorite comfort-food recipes. Cuddle up with a bowl of khichadi ... and maybe it will bring back a smile to your face.

KHICHADI is a special food that transports me to another time and place, and brings back emotions of warmth and caring. Any time anyone in our family came down with a cold or cough, my grandmother would make this rice-and-bean porridge. She would carefully grind the spices and make this humble dish, which has unique healing properties. The yellow split beans are easy to digest and quick to cook.

KHICHADI
1 cup rice
¾ cup split yellow mung beans
1 teaspoon cumin seeds
1 teaspoon whole black pepper
1 teaspoon ginger paste
1 garlic clove, chopped
½ teaspoon turmeric powder
1 teaspoon brown sugar or jaggery
5 cups boiling water
salt to taste
1 tablespoon lime juice

Wash the rice and beans, mix, and drain in a colander.

Coarsely grind cumin and black pepper in a spice grinder (or coffee grinder used only for spices). In a thick-bottomed pot add all the ingredients except lime juice.

Cook on high heat for 5 minutes, uncovered. Add limejuice and lower the heat. Cover the pot with a tight-fitting lid and cook for 15 minutes on low heat. Remove from heat but do not remove the lid for the next 10 minutes, so that the steam continues the cooking process. Garnish with chopped carrots and serve with a dollop of ghee.

Ever Wonder About The Seven Wonders?

DO YOU know the Seven Wonders of the World?

If you just said `Aha!' very confidently and stopped counting after the first three or four and were confused, join the club.

Trying to recall school textbooks, or looking up the net? Hmmmm... imagine the kind of confusion school kids go through when their teacher asks them such a question in class, or worse still, ask for a project to be done.

So who has the right answers? What are the right answers? Are there right answers to this quiz? Is that ode to romance, the Taj Mahal, on the list or is it only a patriotic Indian's wishful thinking?

That's a whole string of questions with a big question mark trapping them all.

It is usually understood that the seven wonders refer to the architectural wonders of the ancient world - Pyramids of Egypt, Pharos (lighthouse) of Alexandria, Hanging Gardens of Babylon,

The Temple of Artemis, Statue of Zeus, Mausoleum at Halicarnassus, and the Colossus of Rhodes. Says Bangalore-based quizmaster Avinash Mudaliar, "I would definitely accept only the seven ancient wonders as the right answer to the question in a quiz." Most encyclopaedias too stick to the seven ancient wonders.

But in this string, only the Pyramids of Egypt survive. And many of us can't for the life of us pronounce most of the other wonders, leave alone young schoolchildren!

As the Japan Football Association Secretary Takeo Hirata explained, the whole concept had to be given a cautious start and with a lot of farsighted planning. For, firstly the land known for its sumo wrestling and baseball had to accept the elevation of a sport that was better known in the University level than national.
